Need a new Spring salad recipe? This is one of my favourites right now:
𝐀𝐫𝐮𝐠𝐮𝐥𝐚 𝐁𝐥𝐨𝐨𝐝 𝐎𝐫𝐚𝐧𝐠𝐞 𝐒𝐚𝐥𝐚𝐝 𝐰𝐢𝐭𝐡 𝐇𝐨𝐧𝐞𝐲 𝗪𝐚𝐥𝐧𝐮𝐭𝐬
1/2 cup Walnuts
1/4 cup Honey
1/8 tsp Sea Salt
1 Blood Orange
1 Regular Orange
1/4 cup Feta
1 large Bag of Arugala
1/4 cup Fresh Peas
1 Whole Endive, sliced
Salt and Pepper
𝐅𝐨𝐫 𝐭𝐡𝐞 𝐇𝐨𝐧𝐞𝐲 𝗪𝐚𝐥𝐧𝐮𝐭𝐬:
Preheat a dry pan over a medium-high heat. Add the walnuts, honey and salt. Cook, stirring frequently, until honey is caramelized and nuts are toasted, about 3-4 minutes. Set aside to cool.
𝐅𝐨𝐫 𝐭𝐡𝐞 𝐒𝐚𝐥𝐚𝐝 & 𝐃𝐫𝐞𝐬𝐬𝐢𝐧𝐠:
In a small bowl whisk together the juice of the regular orange, 4 tbsp. olive oil, 1/2 tsp salt and 1/4 tsp pepper.
In a large bowl pour dressing over arugula, peas & endive and toss to coat. Lay on a large plate.
Cut out blood orange segments and scatter over salad.
Crumble feta on top.
Sprinkle with honey walnuts.
