Spring Salad Recipe
𝐅𝐨𝐫 𝐭𝐡𝐞 𝐇𝐨𝐧𝐞𝐲 𝗪𝐚𝐥𝐧𝐮𝐭𝐬:
Preheat a dry pan over a medium-high heat. Add the walnuts, honey and salt. Cook, stirring frequently, until honey is caramelized and nuts are toasted, about 3-4 minutes. Set aside on a flat surface with parchment paper.
𝐅𝐨𝐫 𝐭𝐡𝐞 𝐒𝐚𝐥𝐚𝐝 & 𝐃𝐫𝐞𝐬𝐬𝐢𝐧𝐠:
In a small bowl whisk together the juice of the regular orange, 4 tbsp. olive oil, 1/2 tsp salt and 1/4 tsp pepper.
In a large bowl pour dressing over arugula, peas & endive and toss to coat. Lay on a large plate. Cut out blood orange segments and scatter over salad, crumble feta on top and sprinkle with honey walnuts.
